Our company has brought two important aspect in the processing of Encent. We have developed a process flow to achive a bright and clean a high quality product. The extraction and purification process for the starch production is made with technology that guarant the safety and the quality of the product.
Our ensent based glutin free starch has the lowest gliadin content and superior baking properties. Our company has achived to produce with its methods a length fiber than the tradtional processed product. The minimum length of the fiber is 1m but can go as long as 3m
Bright starch product is all made natural, we refrain from using micro-biocides and chemical extraction aids.
According to Regulation (EC) 41/2009 (from 20/07/2016 Implementing Regulation (EU) No 828/2014) Bright Starch is a gluten-free starch and is suitable for people intolerant to gluten. The Bright starch shows a high viscosity and excellent baking properties.
Traditionally Bulla is extracted from Enset by scrapping the stem and leaf sheaths in to pulp, the juice is squeezed out of this pulp by hand and on then the juice is evaporated down in to Bulla which is white powder and is packed using "koba" which is the leaf of the Enset. The tradtional made Bulla can be stored for years as well.
The process of Kocho and Bula involves fermentation process. Traditionally the fermentation process is in a big bundle, buried underground for 3 to 6 months. The clearness and the qualty of the product is heavly determined in the process of fermentation process.
The traditional product that is “kocho” is a solid staple which is eaten with milk, cheese, cabbage, meat and/or coffee. As well as Bulla. Beside for humans food, the leaves is used for preparation of pets, for Warping, for serving as plates for cultural food (Kitifo), for producing dry midribs and sheaths , mat, uaws as a rope, as fuelwood.
